Fabian Fuchs has earned his spurs in various positions with Rudi Lehman, Nenad Mlinarevic, Marcus G. Lindner, Peter Schnaibel, and David Martinez. He broadened his horizons through work stays in Sydney and London, as well as during a several-month-long journey through Australia and Asia, before realizing himself as the head chef at the Zurich restaurant EquiTable (17 Gault Millau points, 1 Michelin star, 1 Green Michelin star). He describes himself as composed and uncompromising. His cuisine is pure, always seasonal, and whenever possible, sourced locally.
