Fermentation is embedded in every culture of the world in a multitude of ways and directly maps the history of the process of civilization. Looking at different traditions of fermentation is therefore also an approach to our own origins and an indulgent exercise in empathy towards planet Earth. Led by program curator Franziska Wick, Katsu Lask and Eve Jazmati discuss diverse traditions and techniques of fermenting as well as their experiences with them. The goal: to discover new pleasures and revitalize the body with fermented foods.
