If the beetroot were to be discovered only now, it would immediately be labelled a "superfood". Beetroot is extremely healthy, particularly for the heart. The red beet, as it is also known, is packed with vitamin C, folic acid and nitrate.
What is much more important, however, is that beetroot is highly versatile and absolutely delicious – oven roasted with a little goat's cheese, for example!
Equally versatile is celery. The tuberous vegetable is most often used as an ingredient in minestrone, but celery can also be used to make a piccata or aperitif.
