The first topic of the Food Report 2022 by Hanni Rützler is “the new normal”, because the corona crisis highlighted a huge food issue on all levels: it was food that returned structure to us end consumers during lockdown – and that almost simultaneously worldwide. Pre-corona, it was all about snackification and the dissolution of the strict meal structure, but then people suddenly began gathering around the dinner table again.
In turn, this also highlighted such engineered failures as working conditions in the production sector, or the bottlenecks in and dependencies on imports, not to mention the problems in the gastronomy sector.
