His restaurant, Silo, has adopted a zero-waste policy as its guiding principle, which means a much greater awareness of numerous issues relating to human nutrition. Because neglecting enjoyment is a no-no and quality control absolutely paramount, Silo grinds, brews, collects and grows its own food.
