Snails, Vegetables, and the "Edible City"

Keynote: Andreas Gugumuck

29. Oct 2026
14:30 - 15:30

Situated on the outskirts of Vienna, the Gugumuck Farm is a unique place where agriculture and farm-to-table dining meet seamlessly. Surrounded by snail farming, market gardening, aquaponics, and orchards, guests can experience firsthand how food is produced locally and brought straight to the kitchen. At the heart of it all is the Viennese Roman snail, a nearly forgotten delicacy that Andreas Gugumuck brought back to life. The farm vividly demonstrates how regional food production, biodiversity, and culinary enjoyment form a vibrant closed-loop system. A keynote for agriculture and media professionals as well as food enthusiasts.

  • Andreas Gugumuck

Farmer & Founder of the Wiener Schnecken Manufaktur & Initiator of the Zukunftshof Rothneusiedl Project

On his 300-year-old family farm on the outskirts of Vienna, he revived the historical Viennese snail culture and turned it into a circular model farm for the "Edible City" concept. Combining snail breeding, market gardening, and aquaponics, he merges regenerative agriculture, urban food production, and gastronomy into a unique experience: "Experiencing circular food - from source to savor."
