Following the motto "Switzerland on the plate, Switzerland in the glass", the restaurant Werkhof exclusively uses products from Switzerland—from the feed for the animals to the menus on the plate. From the beginning, it was clear at Werkhof that they wanted to offer a comprehensible concept with the great goal of increasingly working in harmony with nature and its wild products.

In the Werkhof kitchen, the products are distinguished by their top-notch quality and full flavors. These outstanding characteristics are thanks to natural cultivation and short delivery routes, which ensure that the ingredients always remain fresh and flavorful. Whenever possible, close collaboration is maintained with small producers. These producers offer their goods in niche markets and place great value on quality and sustainability. This collaboration ensures that only the best and freshest ingredients make their way into the kitchen, which is reflected in the high quality and intense flavor of the dishes.

At Werkhof, the complete utilization of products is of utmost priority — "from tail to nose" and "from root to leaf." Production relies on time-honored methods while leaving room for new processes, creative creations, and innovative flavors. This combination of traditional craftsmanship and modern innovation makes it possible to create unique and sustainable dishes that are both delicious and ecologically sound.

Additionally, as many products as possible are made in-house, such as vinegar, cream, and various beverages.

    Meat

    For many conscious consumers, humane animal husbandry and stress-free slaughter are crucial when buying meat. To spare animals from the stress of transport and slaughterhouses in the future, the company Platzhirsch Hofschlachtungen GmbH aims to offer on-farm slaughtering as a service for agricultural businesses and meat marketers. They plan to slaughter cattle, pigs, and small livestock (goats, sheep) directly on the respective farms in a familiar environment.

    Grains, potatoes, and sunchokes

    For 45 years, Hanspeter Saxer has been dedicated to preserving and cultivating ancient grain varieties—currently around 100 different types. Special emphasis is placed on careful interaction with nature. His grains offer a unique taste experience in breads, pasta, and dishes, such as a side of red wheat, black barley, and aromatic spelt rye, whether prepared as risotto or in other recipes!
